Pretzel Bites

My pretzel bites are so addictive you can’t stop eating until they’re all gone.
Delicious with spreads, perfect on their own, or even with a warm bowl of soup – simply delicious.

This time I used the same dough as my challah.

In my baking workshops, we bake together at my place in Mid-Levels, and everyone takes home whatever they’ve made.

Pretzel Bites

Ingredients:

  • 500 g all-purpose flour

  • 2 tsp salt

  • 4 tbsp sugar

  • 1 tbsp dry yeast

  • 2 tbsp olive oil

  • 1 1/4 cups water

  • For topping: 3–4 tbsp baking soda, coarse salt

Instructions:

  1. Mix all dry ingredients in a bowl.

  2. Add the wet ingredients and knead into a sticky dough.

  3. Let the dough rise until doubled in size.

  4. Roll the dough into a log and cut into small bite-sized pieces.

  5. Bring a pot of water to a boil and add the baking soda.

  6. Boil the pieces for 20–30 seconds, then remove with a slotted spoon and place on a parchment-lined baking tray.

  7. Sprinkle with coarse salt.

  8. Bake at 200°C / 390°F for 12–15 minutes, until golden brown.

  9. Let cool slightly before serving.
